Greek Mediterranean Mixed Salad

I am always looking for quick vegetarian side dishes, salads or mains. This Mediterranean Greek Mixed Salad is filled with flavor, texture and healthy ingredients.

The Main Ingredients:  Black Olives, Garbanzo Beans and Artichoke Hearts.

My Grandmother use to make something similar to this Mixed Salad but she called “canned salad.”  She was fascinated by canned food. She grew up on a mountain in West Virginia and ate off the land, the farm. Canned food might have intrigued her but she liked fresh ingredients best. This was a good Winter substitute for her.

Start with a can of black olives, garbanzo beans and artichoke hearts. Drain and add to a bowl.


Add in salt, pepper and 1/4 cup of your favorite Greek Salad Dressing (Italian works great too!).  Mix together thoroughly.


Here’s where you can get a little crazy with this Mixed Salad…. add in any similar ingredients that are your favorite. For example, I added in spicy Chow Chow and Relish.  This would be a good time to add other condiments like mustard or a dash of hot sauce.  Mix well!


After mixing well, now add the tomatoes. I like to cut these little sweet tomatoes in half before I add them to the Mixed Salad. It drives me crazy biting into a whole sweet tomato and it explodes.  Again, stir well.

If I am eating this immediately, I’ll add a cucumber and half a bag of Mixed lettuce. But to be honest, it’s best to leave these out if you plan on eating this Mixed Salad later. The cucumber and lettuce don’t seem to hold up after marinating.

Let marinate for at least two hours to enjoy the full flavors. If you don’t have the time, enjoy right away but you might need to add a touch of salt and pepper.   Add cured meat like salami slices or chunks from the deli to make this more hearty.   I am lactose intolerant but if you prefer cheese add in feta or chunks of creamy fresh mozzarella.



1 can of Black Olives

1 can of Garbanzo Beans

1 can of Artichoke Hearts

1 small container of Sweet Tomatoes

1/4 cup of Greek Salad Dressing (or Italian)

Salt and Pepper

Optional:  Cucumber, Mixed Lettuce, Chow Chow, Relish, Feta Cheese, Salami

  1. Open up the Black Olives, Garbanzo Beans and Artichoke Hearts and drain each.
  2. Add the canned items to a large bowl.
  3. Add 1/4 cup of Greek Salad Dressing and salt and pepper. Mix very well!
  4. Add Sweet Tomatoes, Optional Chow Chow & Relish. Mix well.
  5. If eating now, add Cucumber and Lettuce. Otherwise, add these just before serving.
  6. Cover and Marinate for two hours.
  7. Add Salami, if preferred.
  8. Eat and Enjoy!


Tip:  The Tomatoes and Cucumbers add extra liquid after marinating.  If there is too much liquid, I will drain this Mixed Salad or use a Slotted Spoon to serve.
