Short ribs are tricky because they need A LOT of cooking time to break down into wonderful bits of meat.  Grilling alone will not get the job done. You will need to cook them further in a crockpot, oven or stovetop. Oh but grilling them first delivers a delicious flavor that can’t compare.

Usually we grill steaks on our O Grill but my son is addicted to short ribs and picked up those instead of steaks.  

A lot of people get nervous about cooking short ribs. They are super easy!  Usually, I buy them bone-in but for camping, no bones are easier.

Transfer to Crock Pot or Oven to finish cooking.

By adding a small amount of beef broth, the grill marks remain during cooking.

Easy to serve with a salad and mashed potatoes or grilled polenta. I did all three. I did cheat and bought the polenta at the grocery store in one of those “rolls.”

I had a loaf of bread that I cut in half, spread butter and sprinkled garlic seasoning. Grilled it for two minutes and it was delicious!

The Next Day, my son was starving and decided to make up a special dinner with leftovers: Short Ribs, Grilled Chicken and Fettuccine Alfredo.

Easy Instructions:

  1. Put your short ribs on a platter.
  2. Season the heck out of them on both sides. Pick whatever seasoning suits you. In our home, it’s Salt, Pepper, Garlic, Lawry’s and Old Bay.  You can’t go wrong here but make sure to use A LOT of seasoning.
  3. On a High Heat Grill, lay the short ribs down and let them sit for at least 15 minutes per side. They will not burn. You want a super good sear with those beautiful grill marks.
  4. After grilling each side at least 15 minutes, check to see if there are any ungrilled “spots.” If so, grill those spots. You want a full sear everywhere on these short ribs.
  5. Let the short ribs sit, off your grill and on your platter, for 15 minutes. You want them to settle down before transferring them to the next pot.
  6. Transfer the ribs to a crockpot or oven, adding one cup of beef broth, to finish the cooking.
  7. Crock Pot, high heat, for 3 hours. Oven, 400 degrees, for 2 hours (check after 1 hour). Times vary per individual user’s equipment.

Serve with mashed potatoes unless you are adventurous enough to make polenta. I made our mashed potatoes in a crockpot.

Prep: 5 Minutes

Grill: 30 to 40 minutes

Crockpot: 3 Hours OR Oven: 2 Hours
